Easy carrot cake muffins are the easiest recipe to make. A wonderful healthy carrot cake made into muffins. Simple, with a marzipan carrot on the top, or just cream cheese topping.
This carrot muffin recipe is so easy, my kids are always ready to help me make it. The no fuss simple muffin recipe is just perfect for them.
1 1/2 cups flour
1 cup sugar.
1 teaspoon vanilla essence.
1 teaspoon baking powder.
1 teaspoon baking soda.
2/3 cup vegetable oil.
1/2 teaspoon salt.
1 cup grated carrot.
1/2 cup crushed pineapple or mango or peaches well drained ( keep a bit of the juice).
1 teaspoon ground cinnamon . Optional: sultanas or raisins
Sift dry ingredients into a bowl.
Beat together the eggs, oil, and vanilla essence.
Add to your flour mixture.
Then add the carrots, sultanas, pineapple (or your chosen fruit) and a bit of juice, mix well.
Add the sultanas or raisins if you wish.
Spoon into greased muffin cups and bake at 200°C for 20 minutes.
This recipe makes approx 12 large muffins.
